
1/2 cup canola oil
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon xanthan gum
1/2 teaspoon gluten free baking powder
3/4 teaspoon salt
1 1/4 cups of quinoa flakes
1/2 cup brown rice flour
1/4 potato starch flour
1/4 arrowroot flour
1 cup gluten free chocolate chips
2 cups pureed carrots
Blend the first 5 ingredients together with a hand mixer until creamy. Slowly add the other ingredients, mixing between each added item. Scoop small amounts onto a greased cookie sheet at bake for 15 minutes in a 375 degree oven. Allow to cool before serving.
