
When I was recently in
Philly we ate at this really great restaurant,
El Vez, and I had this amazing burrito. I came home and I did my best to recreate it. Sweet potatoes, portabello mushrooms, tofu, corn and a dash of cilantro. I tried. I will admit the one I ate in Philly was amazing, absolutely amazing...but my recreation was pretty darn good and I'll definitely be making it again.
